She bakes from recipes with the best ingredients that she has tried and tested during her 23 years of confectionary experience. These recipes are all filled with layers of fruit preserve and flavoured butter cream.

Fruitcakes are coated with a layer of almond paste.

All cake exteriors are iced with sugar paste. The decorations are handmade from sugar and tinted with edible food colours.
